白玉田楽/Sticky rice flour balls with sweet miso paste

A healthy side-dish blending film tofu and sticky rice flour.
It is crispy on the outside and chewy on the inside.


白玉粉 100g/100g rice flour
木綿豆腐 150g/150g film tofu
田楽味噌(市販品) 適量/ some sweet miso paste
ごま油 大さじ1/ 1 tbsp sesame oil
いりごま 適量/ some roasted sesame


  1. ボウルに白玉粉と木綿豆腐を加え、よく混ぜる。食べやすい大きさに丸める。 Put rice flour and film tofu in a bowl and mix them well.Round them into bite-size balls.
  2. 鍋に湯を沸かし、強めの中火で①が浮き上がるまでゆでる。浮き上がってから1~2分たったものら冷水に移し、冷めたら水気を切る。 Bring a pan with enough water to the boil. Put ① and boil over high-medium heat. Boil another one to two minutes after the dough balls rise to the surface.Put them in cold water and drain well.
  3. フライパンにごま油を熱し、②を並べて中火で両面に焼き色がつくまで焼く。 Heat sesame oil in a pan over medium heat and cook ② until lightly browned on both sides.
  4. 皿に盛り付け、田楽味噌をつけていりごまをまぶす。 Serve them on a plate and add sweet miso paste and roasted sesame on top.

Tofu’s water holds the dough together. Use tofu without draining the water.
If you do not have sweet miso paste, put 1 tbsp of miso, 1/2 tbsp sweet sake, 1/2 tbsp sugar and 1/2 tbsp sake into a microwave-resistant bowl. Loosely cover with a plastic wrap and heat in a microwave oven for 20-30 seconds at 600W and mix well to make the sauce.
